Dine on a delicious five-course meal expertly paired with wines from around the world. Through the works of Dave Phinney with Orin Swift Cellars, their latest focus is on making the best value wines possible across all of the major wine producing regions of the world. These varietals featured are just a select few from their ever growing collection. 

Event attendees will also learn about the wines and the food pairings directly from the representative from Orin Swift and our Arboretum Chefs.  

 

Wine Dinner Menu:

Amuse: Lobster bisque shooters, polenta crouton
Paired with Locations “Corse”, Vin de Corse Vermentino, France

Appetizer: Pork belly, braised cherries, eggplant croutons, fennel salad
Paired with Locations “I”, Red Blend, Italy

Salad: Endive, mixed greens, crispy pancetta, egg, basil-dijon vinaigrette
Paired with Locations “NZ”, Sauvignon Blanc, New Zealand

Entrée: Filet of beef, braised kale, Cipollini onions, four cheese whipped potato, roasted tomato demi-glace
Paired with Locations “E”, Red Blend, Spain

Dessert: Strawberry and mango mousse, mixed berries, Chantilly cream
Paired with David Phinney "Fragile", Rose, France
 

Vegetarian Menu:
